I'm deffo trying this! One of my favorite family dinner memories is making potato gnocchi and our tutilla (our family slang for what is better known as butternut squash ravioli) from scratch. It takes the better part of an afternoon to get the pasta dough just right, roll it out, cut & fill with squash and make the homemade sauce to go with :-) ... none of these are gluten free or vegan however..although I wonder how hard it would be to modify the recipes (without compromising taste/texture)?
